Ingredients: 8 oz bowtie pasta 1 t. chopped garlic 2 T. olive oil 1 C. chopped fresh spinach 1 C. broccoli florets 1 medium red pepper, roasted 1 C. grilled chicken, sliced into 1/2" pieces 1 C. prepared Alfredo sauce 1/8 C. prepared basil pesto sauce 1 t. Italian seasoning 2 T. shredded Parmesan cheese Procedure: Cook pasta according to package directions. Drain well and set aside. In a 10" saute pan, saute garlic in oil. Add spinach, broccoli, red pepper and grilled chicken. Toss to combine. Stir in Alfredo and pesto sauces. Simmer for 5 minutes. Reheat pasta if necessary. Pour pasta into bowl and top with vegetable/sauce mixture. Sprinkle with Italian seasoning. |
